Aquafaba is the liquid from a can of chickpeas. Normally, it would head straight down the sink leaving you with just the chickpeas to play with. However, there is certainly some fun to be had by hanging on to that liquid. Aquafaba has revolutionized vegan cooking and baking by acting, rather convincingly, like egg whites. When whipped, aquafaba foams up and stiffens just like egg whites, making vegan meringues a possibility!

Start by draining a can of chickpeas and saving the liquid (aquafaba). Add the aquafaba to a bowl and beat it using an electric mixer until soft peaks form. Gradually add sugar, vanilla extract, and dairy-free chocolate if you’d like. That’s it! It can now be incorporated into your favorite dessert recipe.

Chickpeas – also known as garbanzo beans – are a great source of plant-based protein, complex carbohydrates, and dietary fiber, making them a filling, satisfying, and heart-healthy choice. They’re also packed with several important vitamins and minerals, including folate, iron, magnesium, phosphorus, copper, zinc, and manganese. These nutrients are important for heart and bone health, metabolism regulation, and energy production. Adequate folate intake is especially important for pregnant women, as it has been found to help prevent specific birth defects.

Not only are chickpeas a great source of protein, fiber, and other vitamins, but they can be added to a wide array of baked goods for a boost of nutrition. Plus, the consistency of blended chickpeas adds the perfect amount of creaminess to cookies, cakes, brownies, and other treats.
