4. Coconut Oil Crispy Rice

The crispy layer is the ultimate treat in this recipe by Katzie Guy-Hamilton. Known as tah dig, it forms during the steaming of the basmati rice on the bottom of the pot. A good tah dig is judged by its even, golden-brown crust as well as its easy release from the bottom of the pot. You essentially scoop out the steamed rice and then turn the pot upside down in hopes that the tah dig pops out fully intact onto a plate. Saffron threads, the most luxurious spice on earth, add a touch of color and earthiness to the finished rice.

Nuggets are a widely eaten snack or entree, although they are not a healthy and recommended food. However, these nuggets are a healthier option with low saturated fat content, since the main ingredient is cauliflower. These nuggets by Yana Chistyakova have a creamy and smooth texture inside and are crispy on the outside. To add a touch of different flavor and to mask a little the flavor of the cauliflower, there are spices and grated vegan cheese.

10. Eat the Rainbow Salad
Source: Eat the Rainbow Salad
Oh, the dance of flavors in this salad by Katzie Guy-Hamilton. It has earthy grated sweet potato mingling with the sweet and juicy grated or peeled carrots. A whisper of tahini adds a bit of creaminess to the otherwise vinegary concoction, rounded out with chamomile-scented pickled raisins and bright fresh herbs. Despite its being a raw salad, this is something that feels almost soft and unctuous, deeply satisfying while cleansing and vitamin-packed.
