This year, Costco ditched their beloved hot dogs in favor of vegan options. People were angry. People were amazed. Vegans everywhere rejoiced. Now, they’ve added a salad that’s anything but boring, because we need more of those, to their list.

The El Pastor Salad, the vegan item that replaced their Polish hot dogs, will be available nationwide in their food courts. This salad is Mexican-inspired and unlike typical al pastor salads, the Costco version is made with soy protein rather than pork. It also contains crunchy romaine lettuce, black beans, and “banh mi” vegetables and plenty of dressing.

In June, Costco added the vegan açaí bowl to the menu, which has blueberries, banana chips, and granola. It replaced a dairy-based option in the soft-serve dispenser at several locations!

Customers across Instagram are more than pleased with the new salad addition.

@ilin10 said, “Just discovered a plant-based protein al pastor salad at the Costco food court today, and it’s HUGE and TASTY! I could only finish about half of it, and I didn’t even need the dressing. So my meal was less than 200 calories, and I have leftovers for lunch tomorrow, too.”

While @epvegsnob said, “Costco has a #vegetarian option in their food court!!! Al Pastor salad (swipe to see details)! It’s a huge serving & not bad. Kinda like cold soyrizo but bigger chunks. Couldn’t tell what the dressing was; kinda tasted like a creamy sweet soy. No one could tell me if it’s vegan w/out the dressing.”

Way to go Costco! We can’t wait to see the other vegan options that are added.
