This Chef Is Turning This Historic Century Hall Into An Organic, Vegan-Friendly Market!


Chef David Dickensauge, from Mississippi, has strived to learn from the best in the culinary industry and has big, inventive dreams for the future. Working as a food designer at Corks & Cleaver Bistro and executive chef at Bin 77 in Baton Rouge, he now plans to open a sensational vegan marketplace at historic Century Hall in Bay St. Louis.

Century Hall, built over 100 years ago, is still burgeoning with remnants of the past as a studio, ballroom, and gathering place and Dickensauge hopes to turn the upstairs portion into a beautifully renovated, green market called The Ugly CarrotWhy name it that, you may ask? This Mississippi chef explains that he belongs to a farm in Ohio called, Chef’s Garden and that when a carrot is naturally grown, it isn’t forced into a shape. That shape may be somewhat ugly, but that’s a good thing because it’s natural.

Dickensauge’s idea for the marketplace is to be a one-stop shop for all your produce, on the go meals, and freshly-pressed juices. He wants to bring a sustainable marketplace to Southern Mississippi that offers produce from farmers within a 100-mile radius.

The main purpose of The Ugly Carrot is to supply readily accessible health foods in an accommodating atmosphere. Some items that will be offered in the marketplace are local produce, vegetarian and vegan sandwiches and salads, homemade kombucha, and fresh juice.

Dickensauge hopes to one day open up to 5 vegan marketplaces, and we sure are excited to see what the future holds for him!
