For this recipe, you’ll need canned chickpeas, onion, red pepper, apples, mint, cilantro, dried cranberries, fresh lemon, red wine vinegar, olive oil, cinnamon, curry powder, cumin, sweetener, and salt. The best part of this recipe is how easy it is to prep. It’s as simple as adding all the ingredients to a bowl and mixing! This chickpea dish tastes great all on its own or can be added to salads, grain bowls, or even used as a dip.

Chickpeas are packed with several important vitamins and minerals, including folate, iron, magnesium, phosphorus, copper, zinc, and manganese.
