Tis the season for Mexican-cuisine eating. During the summertime, nothing is better than enjoy a veggie stuffed taco with a side of margarita on some sunny outdoor balcony. Since plant-based eating is the leading dining trend of 2018, it’s no surprise that every day another vegan restaurant is opening up. With a mission to “feed the soul”, Tacotarian is aiming to bring vegan Mexican cuisine to Las Vegas.

They announced that they want to, “turn Vegas vegan one taco at a time,” and that’s a mission statement we can agree with and fully support. The vegan taco shop, which will surely be a hit in any city, and will take over a former dry cleaner at Spring Valley’s Lynden Square retail center.

So, what will be on the menu, you ask? The options will be plentiful. Tacos will have fillings like seitan, pineapple, jackfruit, roasted poblano, beer battered avocado and refried beans. Other options will include a mashed potato chorizo flautas, asada fries, hefty burritos, nachos and taco bowls filled with loads of Mexican toppings, vegan style of course.

According to Mintel, 31% of Americans practice meat-free days, about 83% of U.S. consumers are adding plant-based foods to their diets, and over the past decade, consumers under 40 have upped their fresh vegetable intake by 52. This ‘mega-trend’ is most apparent in grocery stores around the world, and restaurant openings.
