Originally from the Campania region of Italy, linguini (or linguine) is a type of pasta that translates from Italian into English as “little tongues.”

As creepy as that may sound, linguini is actually a wide, flat, and thin-shaped noodle that can have the same length or thickness as spaghetti, but tends to be marginally wider than spaghetti, and not quite as wide as fettuccine.

Traditionally, spaghetti is paired with heavier sauces, such as meaty Bolognese Sauce or classic marinara sauces (and you can check out how to make your own Fresh Marinara Sauce while you’re at it).

Linguine, on the other hand, tends to pair with lighter sauces, and pestos. Don’t worry — if you’re wondering How to Make Pesto Without Cheese — It’s Easy!

Below, we’ve put together five excellent vegan linguini recipes from our Food Monster App, and then included a few different sauces and toppings recipes we know will pair marvelously with plain linguine below. Which dish are you most tempted to make?

This recipe for Lemon and Walnut Linguini With Roasted Broccoli by Sarah Gory is light but delicious. Roasting the garlic mellows and sweetens it, and the toasted breadcrumb-walnut mixture gives the whole dish a depth of flavor. As this is a deliberately simple pasta dish, use the best quality ingredients you can find – locally-grown garlic and juicy organic lemons. Rather than store-bought bread crumbs, save a couple of slices of sourdough from a loaf and make your own. Find some high-quality linguine, too!
