The ingredients for this stellar vegan cheesecake can be found in most grocery stores: raw almonds, dates, bananas, a lemon, and coconut oil. It’s super easy to put together, too. Blend the base, then pack it into the dish. Blend the filling, pour it over the base. Freeze. Eat. Like we said, easy peasy lemon squeezy. When blended with coconut oil and lemon juice, then frozen, bananas take on a very cheesecake-like texture.
