Creamy. Decadent. A delightful sensory experience that is practically unrivaled. These are only a few of the ways that we would describe our feelings towards cheesecake. We don’t think we’re the only ones, either – The Cheesecake Factory built a franchise on America’s love for the creamy dessert.
If you’re trying to include more plant-based recipes in your life, you might think that this means an end to cheesecake, as it is traditionally made with cheese and eggs. Or, maybe you’re already familiar with vegan cheesecake, but raw cashews, which are often used to make the filling, or store-bought vegan cream cheese aren’t in your current budget. If that’s the case, or if you’re just looking to save money, then we have some good news for you: even on a budget, you can still make delicious vegan cheesecake. We browsed through the Food Monster App and came back with this perfect cure for your cheesecake cravings:
Blogger Kyra Howearth made this fresh, simply Lemon Cheesecake using only five ingredients.
The ingredients for this stellar vegan cheesecake can be found in most grocery stores: raw almonds, dates, bananas, a lemon, and coconut oil. It’s super easy to put together, too. Blend the base, then pack it into the dish. Blend the filling, pour it over the base. Freeze. Eat. Like we said, easy peasy lemon squeezy. When blended with coconut oil and lemon juice, then frozen, bananas take on a very cheesecake-like texture.
