This watermelon pudding is super easy-to-make, very refreshing, and delicious. It only takes four ingredients to make and once those everything is mixed together and heated, it simply needs to be chilled. Garnish with some chocolate for added flavor.

Watermelon Pudding [Vegan]

This Recipe is :

Dairy Free Vegan

  • 4 cups watermelon juice
  • 2/3 cup cornstarch
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • Vegan semisweet chocolate, for decoration

To Make the Watermelon Juice:

  1. Slice the watermelon in half. Slice the halves into smaller strips and remove the seeds and rind.
  2. Add chunks of watermelon into the blender. Blend the watermelon until it is totally liquefied. Filter the juice through a sieve and measure 4 cups. Alternatively, you can use a juicer.

To Make the Pudding:

  1. In a medium bowl, whisk the cornstarch with ½ cup of watermelon juice. Stir until smooth and no visible lumps.
  2. In a medium saucepan, pour the watermelon juice and slowly pour in the cornstarch mixture, whisking constantly. Add the sugar and cinnamon. Set the pan over low heat and bring to a simmer, whisking frequently, 3-10 minutes, depending on your stove and saucepan, until it starts to thicken. It should coat the back of a spoon and a finger drawn through it leaves a line.
  3. Divide the hot pudding evenly among four custard cups. Refrigerate until chilled, about 4-6 hours.
  4. Removed from the mould carefully and serve with grated semisweet chocolate.

Mostly Mexican and sometimes international easy vegan dinners and desserts. My name is Azu. I am a Biomedical Engineer who likes to cook and bake. I cook, prepare, test and taste international recipes, and if I really like them I share them on my blog Sweet Cannela. I live in Mexico City, which has an altitude of 2,240 m (7,350 ft) above sea level, so I like to experiment with recipes for baking at high altitudes. Lately, I have been interested in making healthier recipes, using good quality ingredients and reducing the consumption of animal products. And although I don’t call myself a strict vegan, I'm making an attempt one recipe at a time. I invite you to see some of my recipes at Sweet Cannela.

Meyer Lemon Coconut Cream Tarts With Mint and Lavender [Vegan, Raw, Gluten-Free]

To make the crust: put the oats and almonds into a high speed blender and blend until it turns into a thick, slightly crumbly paste. If needed or desired, add a little maple syrup, then press into two tartlet molds or whatever shapes/molds you like. Put in the fridge. To make the lemon coconut cream: put the coconut and cashews into your high speed blender and blend until it turns into a thick paste/butter. Stir in a 1/4 cup lemon juice and the maple syrup until evenly combined (or blend it in). If you'd like more lemon flavour, add more lemon juice! I like mine quite tart - no pun intended, seriously - so I used a full 1/2 cup. Spread this mixture evenly into your crusts, then let them sit in the fridge overnight or for at least a couple hours so the flavours can get to know each other. Garnish with mint, basil, lemon zest, maple syrup or whatever else you like! Life is good!
