Spicy Ginger Square With a Sticky, Spiced Date Topping [Vegan, Gluten-Free]

These squares have a crispy and crunchy cookie base with a sweet and spicy topping. The "frosting" is made of dates, which gives it a rich, caramel-y sweetness that complements the ginger. If you're looking for a dessert that strikes the right balance between these two flavors, then look no further!

Spicy Ginger Square With a Sticky, Spicy Date Topping [Vegan, Gluten-Free]

This Recipe is :



For the Base:

  • 1 cup brown rice flour
  • 1 1/2 teaspoons ground ginger
  • 2 teaspoons stevia granules
  • 1/3 cup coconut butter, melted
  • 1/2 cup water

For the Topping:

  • 1 cup dates
  • 2 teaspoons ground ginger
  • 1/3 cup coconut butter, melted


To Make the Base:

  1. Preheat the oven to 350°F.
  2. In a bowl, combine all ingredients for the base except coconut butter and water.
  3. Stir through the water and coconut butter.
  4. Line a small tray with baking paper.
  5. Press the base mixture into the tray.
  6. Bake for 30 minutes.

To Make the Topping:

  1. Meanwhile, make the topping by blending all the topping ingredients in a high-speed blender until a sticky dough forms.
  2. When the base has cooled, spread on the topping.
  3. You can chill the slice to form up the topping if needed before slicing.
