Roasted Ratatouille Toasts [Vegan, Gluten-Free]

Cook Time

  • 4 Roma tomatoes, halved the long way
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper
  • 2 cloves garlic
  • Handful of fresh basil leaves
  • 1 small eggplant, cut into 1-inch cubes
  • 1 medium zucchini, cut into 1-inch cubes
  • 1 red pepper, cut into 1-inch pieces
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper
  • Bread of choice (gluten-free if necessary)
  • Chopped fresh basil for garnish

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper and place halved tomatoes on top. Drizzle with olive oil and sprinkle with salt and pepper. Roast for 40-45 minutes, or until tomatoes are juicy and just starting to golden.
  2. While the tomatoes are roasted, chop your eggplant, zucchini, and red pepper into 1-inch cubes. Spread over a large baking sheet and drizzle with olive oil. Sprinkle with salt and pepper and roast in the same oven for 30 minutes.
  3. Time to make your sauce! Place roasted tomatoes into a high speed blender with 2 garlic cloves, salt, pepper, and fresh basil leaves. Purée until smooth.
  4. Toast bread of choice, then top each slice with a large spoonful (or two) of roasted tomato sauce. Pile on lots of roasted vegetables and sprinkle with freshly chopped basil.

Hi, I'm Liz, the writer and photographer behind Pumpkin & Peanut Butter, a {mostly} plant based food blog dedicated to simple, healthy eats. I focus on the use of natural ingredients, whole grains, and plenty of plants in my recipes--- oh, and of course, peanut butter! Above all, I believe in balance—- balance in the ways we nourish ourselves, the ways we stay active, and the ways we achieve happiness each and every day.
