Rice Paper BLT Sandwich [Vegan, Gluten-Free]

Coconut bacon is delicious, but if you're craving a classic-style BLT, it's missing one thing: the bacon shape. Enter this recipe for the rice paper BLT. The rice paper bacon crispy, a bit chewy, smoky, and it will satisfy any salty cravings you have — plus, it's easy to make. Pair this sammy with your favorite greens, fresh tomato, and a healthy dose of cashew cheese and you have yourself a lunch that you will want to make again and again.

Rice Paper BLT Sandwich [Vegan, Gluten-Free]




For the Rice Paper Bacon:

  • 2 rice paper sheets
  • 1 tablespoon olive oil
  • 3 tablespoons tamari sauce (if gluten-free) or low-sodium soy sauce
  • 1 teaspoon maple syrup
  • 1/2 teaspoon liquid smoke
  • 3 tablespoons nutritional yeast
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • A dash of black pepper
  • 1/8 cup warm water

For the Sandwich:


  1. Take two rice paper sheets, lay them above each other and cut into strips with a kitchen scissor.
  2. For the marinade, add all the ingredients together in a small bowl and mix well.
  3. Line a baking tray with parchment paper and preheat the oven to 400°F.
  4. Prepare a bowl with warm water and place it next to the bowl with the marinade.
  5. Take two strips of rice paper, press them onto each other, and dip into the warm water until it becomes slightly soft. Next, dip the double strip into the marinade and place onto the baking tray.
  6. Repeat this process until all strips are gone.
  7. Place the baking tray in the oven and bake for 7-10 minutes. The baking time might vary, depending on your oven. Make sure to check the strips regularly as they burn very quickly.
  8. Once done, take them off the baking tray and let them cool down.
  9. Prepare your sandwich, by adding the cashew cream cheese, lettuce, tomato, and rice paper bacon, and serve.
