This pimento cheese is so quick and easy to make, you can literally make it for a party mere minutes before you guests arrive. It's cheesy, spicy, and comforting, which are pretty much all the characteristics of a good dip. And since it's primarily made from chickpeas, you can feel good about munching out!
Pimento Cheese [Vegan]
- 1 14-ounce can chickpeas
- 1/2 cup vegan mayonnaise
- 1 4-ounce jar sliced pimentos
- 2 tablespoons nutritional yeast
- Salt and pepper, to taste
- Drain the chickpeas and pimentos. Add all ingredients to a blender or food processor and process until smooth. Garnish with some pimento dices.
