Life gets busy and sometimes, you just want to reach for the quickest eats. This pesto veggie sandwich can be thrown together in no time. Zucchini and bell peppers are grilled to perfection and then stacked high between two fluffy buns with a creamy basil-avocado pesto. Any vegetables could be substituted for the zucchini and bell peppers, be it mushrooms or something a little more seasonal.

Pesto Veggie Sandwiches [Vegan]

Ingredients

For the Sandwich:

  • 1 zucchini
  • 2 bell peppers

For the Pesto:

  • 1/2 cup of any nuts
  • 1 bunch of basil
  • 1 tablespoon nutritional yeast
  • 2 garlic clove
  • 1/2 teaspoon sea salt
  • 1/3 cup olive oil
  • 1/2 squeeze lemon
  • 1/2 cup vegan mayonnaise
  • 1/2 avocado
  • 1 cup spinach

For the Topping:

  • 1 cup arugula
  • 2 buns

Preparation

  1. In a food processor, add the all of the pesto ingredients minus the mayonnaise. Scrape down the sides and process until smooth. Set aside.
  2. Fire up a griddle and cook the sliced zucchini and bell peppers. Spray with olive oil and sprinkle with salt and pepper. Grill for 3 minutes on medium-high, then rotate.  Set aside to cool.
  3. Assemble the sammies by combining the pesto with a little bit of vegan mayonnaise. Stack vegetables high and top with pesto and arugula. You should have 1/2 cup of additional pesto to use for later.
