Pasta Frittata [Vegan, Gluten-Free]

What's more anti-stress than pasta in frittata form for Friday night dinner? You could even be courageous and pick this up with your hands and feel like you're eating pasta pizza. It's your call. Just get cooking! Carbs await.

Pasta Frittata [Vegan, Gluten-Free]


  • 1 pound spaghetti (gluten-free if needed) with marinara sauce
  • 2 teaspoons tomato paste
  • 1 tablespoon yeast
  • 1 tablespoon chopped parsley
  • 1/4 cup chickpea flour
  • 2 cups water
  • 4 tablespoons extra virgin olive oil
  • Pepper, as needed
  • Salt, to taste


  1. In a large bowl, sprinkle chickpea flour in water, add yeast, salt, pepper, and 1 tablespoon of oil. Let it rest for one hour. Add spaghetti and parsley and mix well.
  2. Heat a non-stick frying pan with the remaining oil, pour the dough, distribute it evenly with the back of a spoon. Be sure it is compact Bake for 11-12 minutes on one side, covering with a lid for the first few minutes.
  3.  Let it cool and slice into slices. Serve warm or cold accompanied by a seasonal salad.

I don\'t really understand the cooking instructions. Do you mean bake in the oven, or cook on the stove. What temperature? Thanks!
