Ingredients

For the Crust:

  • 1/2 cup almond flour, finely ground
  • 1/4 cup tapioca flour
  • 1 ounce vegan vanilla protein powder
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons unsweetened almond milk

For the Filling:

  • 3/4 cup fresh or frozen strawberries
  • 1/2 tablespoon chia seeds
  • 2 tablespoons maple syrup or agave
  • 2 tablespoons water
  • 1 teaspoon lemon juice

For the Frosting:

  • .6 ounces vegan vanilla protein powder
  • 2 tablespoons water
  • 1 teaspoon coconut oil, melted
  • 1/8 teaspoon beet powder, for food coloring

Preparation

  1. Preheat oven to 350°F and prepare a baking sheet with parchment paper.
  2. In a bowl, stir together almond flour, tapioca flour, and protein. Melt coconut oil and stir into dry ingredients. Add almond milk and stir until a dough forms. Set dough a side while you make your filling.
  3. If using fresh strawberries, wash thoroughly before cutting off stems and chopping into small pieces. Add strawberries, syrup, water, and lemon juice to a small frying pan and turn on medium heat. Once bubbles form, turn down heat to just a simmer. Cover and let simmer for 3-5 minutes or until strawberries are soft enough to smash with a spatula.
  4. Remove from heat and stir in chia seeds. Let sit while you prepare your pop tarts.
  5. Roll out dough to 1/8-inch thickness. Cut dough into 2×2 inch squares and place on prepared baking sheet.
  6. Repeat with remaining dough until all dough has been used. Recipe will make 10 squares. Add 1 tablespoon of filling into the center of five of the squares. Place the remaining squares on top of the filling. Use a fork to crimp the edges together and poke holes in the top so the heat can escape. Bake for 8-9 minutes.
  7. Once cooled, mix frosting ingredients together and glaze pop tarts. Decorate with vegan sprinkles.

Healthy treats and single-serving desserts made using whole foods ingredients. Hi, I’m Ciarra, I am the recipe creator and photographer and as you may have guessed, I am obsessed with peanut butter and chocolate. Not too long ago I realized my obsession with desserts had me feeling tired and sluggish. I knew my nightly pint of ice cream was the cause but I wasn’t about to give it up, so I set out to make a healthy a batch of brownies using whole food ingredients and then I never looked back!
