Oil-Free Sweet Potato Basmati Brown Rice Casserole [Vegan]

For the Casserole:

  • 1 large yellow onion, diced
  • 1 red bell pepper, seeded and diced
  • 3 garlic cloves, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground coriander
  • 1/4 teaspoon black pepper
  • 2 cups low-sodium vegetable broth
  • 2 large sweet potatoes, peeled and diced
  • 1 15-ounce can lite coconut milk
  • 3 cups cooked brown basmati rice (recipe below) 1 cup golden raisins
  • 1 cup whole grain bread crumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground fennel seed

For the Basmati Rice:

  • 2 cups brown basmati rice
  • 4 cups water

Preparation

To Make the Casserole:

  1. Preheat the oven to 375°F.
  2. Sauté the onion and bell pepper in a skillet over medium heat until the onion turns translucent and starts to brown, about 8 minutes. Add water 1 to 2 tablespoons at a time to keep the vegetables from sticking. Add the garlic, curry powder, coriander, and black pepper, and cook for another minute.
  3. Add the vegetable broth and sweet potatoes and cook until the sweet potatoes are just tender, about 5 minutes. Add the coconut milk, cooked rice, and golden raisins, and mix well. Spoon the mixture into a nonstick 9×13-inch baking dish.
  4. Combine the bread crumbs, garlic powder, and fennel in a small bowl, and mix well. Sprinkle the bread crumb mixture over the casserole and bake until the bread crumbs have browned and the casserole is bubbly, 20 to 25 minutes. Let sit for 5 minutes before serving.

To Make the Basmati Rice:

  1. Combine the rice and water in a 2-quart saucepan, cover, and bring the water to a boil over high heat. Reduce the heat to medium-low and let it simmer for 45 minutes, or until the water is absorbed and the rice is tender.

NOTE FOR THE COOK (Rice): The key to cooking any grain is to make sure to leave the lid on for the entire cooking time.
