These vegan cake pops are healthy, gluten-free, and simple to make! No baking required. The coconut flour batter is sweetened naturally with maple syrup and has vegan protein powder mixed in for extra nutrition. Then, they're dipped in melted chocolate and sprinkled with your favorite topping — whether that's more chocolate chips or something like hemp seeds is up to you.

No-Bake Chocolate Coconut Flour Cake Pops [Vegan, Gluten-Free]

Ingredients

For the Cake Pops:

  • 1/2 cup coconut flour
  • 1 tablespoon cocoa powder
  • 2 tablespoons vegan protein powder
  • 1/2 cup almond milk
  • 1/4 cup maple syrup
  • 1/4 cup vegan chocolate chips, plus 2 tablespoons coconut oil, melted together
  • 1/4 cup vegan chocolate chips (optional)

For the Chocolate Coating:

  • 1/2 cup vegan chocolate chips
  • 3 teaspoons coconut oil

Preparation

  1. In a large bowl, whisk together the coconut flour, cocoa powder, protein powder, almond milk, and maple syrup.
    Stir in the melted chocolate chips and coconut oil. Mix in chocolate chips (optional add in).
  2. Roll mixture into balls, about 1 tablespoon each. Place onto a baking sheet lined with parchment paper. This recipe makes about 15 cake pops.
  3. For the chocolate coating, melt together the chocolate chips and coconut oil.
  4. Dip the end of a cake pop stick into the chocolate coating and gently press into a cake pop. Do this for each cake pop. The chocolate will help the cake balls adhere to the sticks.
  5. Place the sheet of cake pops into the fridge for 20 minutes.
  6. Warm up the chocolate coating a little if it has cooled and thickened. Dip each cake pop into the chocolate coating, letting the excess chocolate drip off before pressing the cake pops into a block of foam.
  7. Top with chocolate chips, hemp seeds, sprinkles, etc. Let set in refrigerator for 20 minutes.

To make the crust: put the oats and almonds into a high speed blender and blend until it turns into a thick, slightly crumbly paste. If needed or desired, add a little maple syrup, then press into two tartlet molds or whatever shapes/molds you like. Put in the fridge. To make the lemon coconut cream: put the coconut and cashews into your high speed blender and blend until it turns into a thick paste/butter. Stir in a 1/4 cup lemon juice and the maple syrup until evenly combined (or blend it in). If you'd like more lemon flavour, add more lemon juice! I like mine quite tart - no pun intended, seriously - so I used a full 1/2 cup. Spread this mixture evenly into your crusts, then let them sit in the fridge overnight or for at least a couple hours so the flavours can get to know each other. Garnish with mint, basil, lemon zest, maple syrup or whatever else you like! Life is good!
