No-Bake Almond Butter Cup Bars [Vegan, Gluten-Free]

These no-bake almond butter cup bars are delicious and satisfying! A sweet, creamy almond butter filling rests upon an oatmeal crust and is topped with smooth chocolate frosting. The almond butter in this recipe can easily be substituted with peanut butter or any other nut butter.

No-Bake Almond Butter Cup Bars [Vegan, Gluten-Free]

For the Oatmeal Crust:

  • 1 cup gluten-free oats (102g)
  • 5 1/4 tablespoons almond butter (84g)
  • 5 1/4 tablespoons agave (105g)

For the Filling:

  • 1/2 cup, plus 2 1/2 tablespoons almond butter
  • 5 1/4 tablespoons agave (105g)
  • 1/2 cup gluten-free oat flour (66g)

For the Chocolate Frosting:

  • 1/3 cup canned coconut milk
  • 3/4 cup vegan chocolate chips


To Make the Oatmeal Crust:

  1. Mix everything together and push into a lined pan.
  2. Put in the refrigerator.

To Make the Filling:

  1. Microwave nut butter with agave to smooth.
  2. Add oat flour and mix well. Mix until the paste thickens to a dough.
  3. Pour over crust and push it flat.
  4. Put in the refrigerator.

To Make the Chocolate Frosting:

  1. Mix chocolate chips and coconut milk together.
  2. Microwave slowly in short burst of 15 seconds, mixing every time.
  3. Once smooth pour on top of dessert refrigerator to frosting sets.
