Miso is one of those ingredients that has a way of completely enveloping dishes with a deep, pungent umami flavor. Additionally, miso pairs very well with the mild, creamy, nutty flavor of the cauliflower. Use this miso cauliflower recipe as a warm, crowd-pleasing dip, a nutritious pasta sauce, or as a topping for open-faced sandwiches.

Warm and Creamy Miso Cauliflower Dip [Vegan]

Ingredients

  • 1 medium cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon dry thyme
  • Salt and black pepper

For the Sauce:

  • 3/4 cup raw cashews
  • 3/4 cup almond milk
  • 1/4 cup white miso
  • 1 teaspoon garlic powder

Preparation

  1. Set the oven to 400°F. Cut the cauliflower into florets, place in a baking pan, and coat with the olive oil, thyme, salt, and black pepper. Cook for 15-20 minutes.
  2. In the meantime, blend all the sauce ingredients in a blender. Transfer the roasted cauliflowers into a saucepan, pour the sauce over and cook for 5-7 minutes over medium heat. Serve warm or at room temperature.
