‘Meat’ and Potato Stew With Peas [Vegan]

Start a new family tradition with this hearty "meat" and potatoes stew! Seitan, carrots, potatoes, and peas are served in a thick, rich gravy. It's so hearty, you might just have to eat it with a fork. This is perfect for a cold night in, with big chunks of veggies and creamy gravy.

'Meat' and Potato Stew With Peas [Vegan]

Ingredients

For the Stew:

  • 1 8-ounce package of seitan, cut into cubes
  • 3 large carrots, cut into small cubes
  • 10-12 small new potatoes, cut in half
  • 2-3 cups of frozen peas
  • 1/2 onion thinly sliced
  • Olive oil
  • Barbecue seasoning

For the Gravy:

  • 1/4 cup white or whole wheat flour
  • 2 cups vegetable broth
  • 2 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons soy sauce
  • 1/2 teaspoon black pepper

Preparation

  1. Preheat oven to 400ºF. Chop up all of the vegetables and the seitan.
  2. Toss all together in a large bowl with olive oil, and seasoning. Place in a large casserole dish. Cook for 1 hour.
  3. Toast dry ingredients over low heat until aromatic. Slowly add broth, whisking to remove any clumps or you can use a hand mixer.
  4. Add soy sauce and mustard and stir well. Simmer on low heat until thick. Remove vegetables and seitan from the oven.
  5. Serve immediately into bowls and add your desired gravy amount.

Sorry but the gravy was very thick, odd consistency and texture. I would not make again. Also it dried all the seitan out and burnt the carrots

Why does the recipe say to add mustard but mustard isn\'t on the list of things
