The creaminess in this lemon mousse is due to the avocado and almond milk, while chia seeds help to keep everything homogeneous, as well as providing an arsenal of nutrients. In addition to being dairy-free, this lemon mousse is gluten-free, vegan, and paleo. This is a rich, creamy, healthy recipe that you don't want to miss.

Key Lime Mousse With Cashew Frosting [Vegan, Gluten-Free]

Cook Time

For the Mousse:

  • 1 cup almond milk
  • 3 tablespoons chia seeds
  • 1/4 teaspoon vanilla extract (optional)
  • 1 avocado/small avocado
  • 4 tablespoons maple syrup
  • Juice and zest of 4 limes (see notes)

For the Frosting:

  • 1/2 cup cashews (soak for 12-24 hours) (see notes)
  • 4 tablespoons virgin coconut oil
  • 2 tablespoons maple syrup (see notes)
  • 1/2 teaspoon vanilla extract
  • A hint of sea salt

  1. In a jar, mix the almond milk with the chia seeds and let stand in the refrigerator for at least 2 hours. The seeds will form a gel texture.
  2. Then place this mixture in a blender along with the rest of the ingredients for the mousse and process until obtaining a homogeneous consistency. You can also do it with mini food processor.
  3. Place in glasses or jars in portions and store in refrigerator while preparing the frosting.
  4. Discard water from cashews and rinse thoroughly. Place all the ingredients for the frosting in a processor or blender and process until obtaining a homogeneous consistency (2-3 minutes).
  5. You can spread the frosting over the mousse with the help of a spoon or pass the frosting through a sleeve with peak decorator to spread the frosting with your favorite design.
  6. Serve or store in refrigerator for up to two days.
