High Protein Bean Recipes for National Bean Day

Happy National Bean Day! Today marks the protein and fiber-rich bean as a holiday. The familiar bean, that comes in all shapes and sizes, is a staple in plant-based diets and provides vitamins and minerals, including  folate, iron, potassium, and zinc. Beans are also packed with protein and a half cup provides about 7 grams of protein! These miracle legumes are easy on your stomach (because of their soluble fiber) and your wallet.

Today also marks the anniversary of the death of Gregor Mendel, the geneticist who used bean and pea plants to test his genetic theories. Some say this is why National Bean Day is celebrated on January 6.

So go ahead and make a bean-hearty dish today. Try an Asian and American fusion with the Hoisin Vegan Black Bean Burger with Spicy Sesame Sauce or a bean-infused dosa like the Baby Lima Beans and Oats Dosa. If you like a simple recipe, try the Simple Slow Cooked Black Eyed Beans.

I didn't even know it was National Bean Day and I happened to eat this: http://vegweb.com/recipes/mustard-black-beans (I added espazote, mace, and black pepper to the recipe...)... It was delicious...

i eat beans so much more since I recently stopped eating meat/dairy because of my love for animals. I am on a mission to spread the word. I hope you will join me and like my page about being vegetarian/vegan to save animals.
