Herbed Chickpea Meatballs [Vegan, Gluten-Free]

These chickpea meatballs are incredibly delicious and simple to make. The chickpeas are blended with a savory blend of herbs and spices and then mixed with your favorite bread crumbs and baked to golden-brown perfection. You can add these to almost any dish to give it a little extra flair and flavor.

Herbed Chickpea Meatballs [Vegan, Gluten-Free]

Ingredients

  • 2 cups chickpeas, rinsed
  • 2 1/2 tablespoons ground flax seed
  • 6 tablespoons water
  • 1/2 cup bread crumbs (gluten-free if needed)
  • 1 tablespoon olive oil (if you are oil-free, this is optional)
  • 1/2 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon parsley
  • 1/4 teaspoon vegan butter
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon basil

Preparation

  1. If you’re using dried chickpeas, soak for 4 hours. Boil them until they are splitting, about 45 minutes to an hour. Skip to step 2 if you’re using canned chickpeas.
  2. Drain the chickpeas and pinch the skin off as many as you have the patience for. Blend the chickpeas in a blender until they’re broken down.
  3. Make your flax seed “eggs” – mix 2 tablespoons of ground flax seed with 6 tablespoons of water. Let this sit for 10-15 minutes.
  4. Mix together the chickpeas and flax seed eggs.
  5. Mix in the remaining ingredients. If the mixture is too sticky, add more breadcrumbs half a tablespoon at a time. If too dry, add more oil or water. You want a consistency that will be easy to roll into balls without sticking to your hands or cracking.
  6. Form the chickpea mixture into meatballs and place onto a greased baking dish.
  7. In a 450°F oven, bake the chickpea meatballs for 20-25 minutes, turning them over halfway through. They will be golden and crispy on the outside when they’re done.
