Easy Sliceable Cashew Cheese [Vegan]

This sliceable, dairy-free cheese is an easy way to get your cheese fix. Made from cashews, they get their cheesy flavor from nutritional yeast, their tanginess from lemon juice, and their cheese-like texture from agar agar, a sea vegetable-based ingredient that acts as a gelling agent. They are very similar in terms of taste and looks, but they aren't quite as firm so you have to handle them with a bit more care. This recipe uses garlic powder and smoked paprika for flavor, but feel free to use whatever combo of herbs and spices you like.

Easy Sliceable Cashew Cheese [Vegan]

This Recipe is :

Dairy Free Vegan


  • 2/3 cup cashews
  • 1/2 cup, plus 2 tablespoons water
  • 3 teaspoons lemon juice
  • 3 teaspoons extra virgin olive oil
  • 3 teaspoons agar agar flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 2 tablespoons nutritional yeast
  • A dash of smoked paprika powder
  • A dash of turmeric, for color (optional)


  1. Preheat your oven to 375°F.
  2. Blend all cashew cheese ingredients in a high-power  blender (plus a dash or turmeric, just for color). If necessary, add a tiny bit of water but only a tiny bit — it needs to have more a paste-like consistency than a cream.
  3. Line a baking tray with baking paper. Evenly spread the cheese paste on the tray (a little less than 1/4-inch).
  4. Bake in the oven for 10 minutes.
  5. Take out, let cool down, and then cut into slices. Lift the slices carefully off the paper so they don’t break.
  6. Have on a sandwich or whichever way you like.
