These tofu nuggets are a vegan twist on a traditional favorite and beat the fast food variety any day. If you don’t want to deep fry them, you can also fry them in a skillet until golden brown. The curry ketchup is a unique dipping sauce that packs a punch and perfectly complements the dish. It also goes great with your morning tofu scramble eggs!

Crispy Tofu Nuggets [Vegan]

Serves

2

Ingredients

For the Tofu Nuggets:

  • 1/2 cup all-purpose flour
  • 1 teaspoon raw cane sugar
  • 1 teaspoon sea salt
  • 2 3/4 cups unsweetened cornflakes
  • 1 14-ounce block tofu
  • 2 cups vegetable oil

For the Curry Ketchup:

  • Juice from 1/2 lemon
  • 2/3 cup tomato paste
  • 2 tablespoons agave syrup
  • 1 teaspoon curry powder
  • 2 tablespoons olive oil
  • Sea salt
  • Freshly ground black pepper

Preparation

To Make the Tofu Nuggets:

  1. Stir the flour together with the raw cane sugar, sea salt, and 6 tablespoons water until the batter is smooth. Finely crumble the cornflakes.
  2. Cut the tofu into slices that are just under 1/2-inch, and then use a knife to shape the tofu into nuggets. Dip the nuggets in the batter and then coat them with the cornflakes.
  3. Heat the vegetable oil in a deep fryer or a small saucepan. You’ll know the oil is hot enough if you dip a wooden toothpick into the oil and small bubbles float up to the top around the toothpick.
  4. Fry the nuggets for approximately 3 minutes. Transfer to a plate lined with paper towels to absorb any excess oil.

To Make the Curry Ketchup:

  1. Mix all of the ingredients with 3 tablespoons water. Serve with the nuggets.

For those of you who might want to try this without the salt, sugar and having to use flour, the trick is to press the water out of the tofu block and to do this, wrap a tofu block in paper towels and set it on a dish. Then take another dish and put it on top of the tofu block. Weigh it down with 3 cans of beans or some equivalent. Leave it along for 30 minutes. You won\'t believe how much water comes out in that time frame. The pressed out tofu block will be naturally sticky and receptive to breading aand seasoning. I was having to use flour before I learned this trick and that\'s a mess and this saves time.

Nope. Soy is actually really good for you. There\'s a lot of misinformation out there. Don\'t pay attention to it.

Make sure the soy is always organic!!

It isn\'t bad unless you\'re allergic. People can be allergic to anything, some to peanuts, some to strawberries, etc. but that doesn\'t mean those things are overall bad. It\'s believed that much of the competitors, meat market, planted that seed, so to speak.
Not all GMOs are bad either. Some are just plants that they\'re helping to grow quicker in less space and become naturally more pest resistant. Organic farming today still uses some pesticides. They also use feces which can carry disease and involve whatever the animals ate. Not all fertilizer sources are vegan-friendly ones.
Soy is given to infants who have milk allergies. The medical association doesn\'t like lawsuits so that would have stopped long ago if an issue. Breast cancer rates are actually lower in areas of which the people consume even more soy than North America. The body needs proteins but doesn\'t care about the source of them. Soy sources are often better though because of what else it does and doesn\'t contain. Soy doesn\'t hinder testosterone production either. Cow\'s milk comes from a living and pregnant animal full of hormones.
Soy is not harmful and this website has some good recipes.
