This cold soup is a great way to get your green while breaking the monotony of salads for every meal. The rich creamy soup is made from arugula, avocados, and a hint of mint to bring a light, freshness to this velvety concoction.

Creamy Chilled Avocado Soup With Wheatgrass [Vegan, Gluten-Free]

Ingredients

  • 7 ounces fresh spinach
  • 2-3 handfuls arugula
  • 1 sprig fresh mint
  • 1 avocado
  • 2 teaspoons wheatgrass
  • 1 cup non-dairy milk
  • Salt to taste
  • Water, as needed
  • 2-3 tablespoons chia seeds

Preparation

  1. Blend all ingredients together, except chia, to complete homogenization. If your soup seems too thick, add water.
  2. Add the chia and mix it in by hand.
  3. Serve the soup immediately with a garnish of fresh mushrooms if desired.
