I do recommend this gorgeous dish. It's packed with so many goodies, healthy fats and protein, that it is the perfect treat for a high activity lifestyle.

If you wanted to, you could use maple syrup instead of dates to make it sweeter.

Coconut Vanilla Chia Pudding [Vegan]

This Recipe is :

Dairy Free Vegan

Ingredients

  • 1 cup coconut milk
  • 1/4 cup chia seeds
  • 2-4 medjool dates, soaked and pitted
  • 1 teaspoon vanilla

Preparation

  1. Combine everything in a high speed blender and blend until completely smooth.
  2. Pour into a cup/bowl and let sit for a few minutes (the chia seeds swell and absorb the liquid)
  3. Add fresh fruit, fancy toppings, or even coconut cream. Delicious.

In our home none of us can eat any form of chia...we cannot sleep when chia is eaten in any form... I regret it since I like the benefits from eating it, but sleep is more important to me
