Beans in fudge? Yes, and this almond butter freezer fudge tastes amazing! It has a base of chickpeas and almond butter and a chocolate fudge swirl made from black beans. They're so good, you would never guess you're eating beans! These simple treats are perfect for potlucks; they're gluten-free, grain-free, soy-free, and ready in a pinch.

Chickpea Almond Butter Freezer Fudge With Black Bean Chocolate Swirl [Vegan, Gluten-Free]

Ingredients

For the Almond Butter Fudge:

  • 1 15-ounce can chickpeas
  • 1/2 cup maple syrup
  • 2/3 cup almond butter
  • 1/3 cup melted coconut oil
  • 1/2 cup maple syrup

For the Black Bean Chocolate Fudge:

  • 1/3 of a 15-ounce can black beans
  • 2 tablespoons melted coconut oil
  • 1/4 cup maple syrup
  • 2 tablespoons cocoa powder

Preparation

  1. Make almond butter fudge first. Process everything in the food processor. Put in 8×8-inch pan.
  2. Make chocolate fudge. Process everything in the food processor. Pour chocolate fudge into a plastic bag and cut off one of the corners.
  3. Streak the top of the almond butter fudge with chocolate fudge lines. With a knife, swirl the two colors as best as you can.
  4. Freeze for 30 minutes or more. Cut into square and place back in the freezer to set.

Hi your first list of ingredients shows maple syrup 1/2 cup TWICE ... am I correct to assume error and it should only be once? looks like a great combo, eager to try it but seems like a lot of maple so just checking.
