Healthy cake batter? This is not a drill! These truffles are melt-in-your-mouth creamy, sweet like birthday cake, and oh yeah, protein-rich to boot! The secret ingredient is vanilla protein powder but don't worry, no aftertaste here, just vanilla-y goodness, soft coconut flour "cake," and adorable rainbow sprinkles. Yum!

Cake Batter Protein Truffles [Vegan, Gluten-Free]

For the Truffles:

  • 2 scoops vegan vanilla protein powder
  • 2 tablespoons coconut flour
  • 2 tablespoons maple syrup
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons coconut sugar
  • 1 1/2 tablespoons unsweetened almond milk
  • Sprinkles of your choice

For the Vanilla Coating:

  • 1/2 scoop vegan vanilla protein powder
  • 3 tablespoons water
  • 1 tablespoon coconut oil, melted
  • 2 tablespoons coconut sugar

  1. In a bowl, mix together your protein, coconut flour, and coconut sugar.
  2. Stir in melted coconut oil and syrup.
  3. Stir in almond milk, you may need to add a half tablespoon more depending on the type of protein you use. You don’t want your dough to be too thick or too dry. Think cookie dough texture.
  4. Separate your dough into seven evenly-sized balls and place them in the freezer for 5 minutes while you prepare your coating.
  5. For the coating, mix together the protein powder, coconut sugar, and warm water. Stir in your coconut oil until completely incorporated. Be sure to add the coconut oil last or the consistency will not be correct.
  6. Remove truffles from the freezer and dip each on the coating using a fork. Let the excess drip before placing on a piece of parchment paper.
  7. Garnish with sprinkles if desired.
  8. Place in the freezer for 5 minutes before serving.
  9. Best if stored in the freezer and then thawed a few minutes before consuming.

Healthy treats and single-serving desserts made using whole foods ingredients. Hi, I’m Ciarra, I am the recipe creator and photographer and as you may have guessed, I am obsessed with peanut butter and chocolate. Not too long ago I realized my obsession with desserts had me feeling tired and sluggish. I knew my nightly pint of ice cream was the cause but I wasn’t about to give it up, so I set out to make a healthy a batch of brownies using whole food ingredients and then I never looked back!
