This recipe for battered okras will give you the perfect dish to bring to a party. The batter is seasoned well and provides a crisp golden shell that is complimented by the tender okra inside. Plus, these battered okra are simple, quick, and incredibly easy to make.

Battered Okra Fritters [Vegan, Gluten-Free]

This Recipe is :

Ingredients

  • 14 ounces okra
  • 3/4 cup vegetable milk
  • 1/2 cup cornmeal
  • 1/4 cup rice flour
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika or chili
  • 1 teaspoon salt

Preparation

  1. Wash the okra well.
  2. In a bowl, mix all the other ingredients until you have a thick batter.
  3. Heat a large amount of oil in a frying pan.
  4. Meanwhile, submerge each okra in the batter.
  5. Fry them until they’re golden and then take them out of the oil.
  6. Remove the excess oil with the paper towels.

Notes

For less oil, you can also bake your okra.

Vegan food has always called my attention because it is varied, colorful, and delicious; there are surprising combinations which create extraordinary and unexpected tastes. However, the most important fact is that no animal has to get hurt in order to eat well. I went vegan in 2011 and it was the best choice I have ever made. First, I did it to save animals, but then later I realized how beneficial it was for both the environment and health. To make the crust: put the oats and almonds into a high speed blender and blend until it turns into a thick, slightly crumbly paste. If needed or desired, add a little maple syrup, then press into two tartlet molds or whatever shapes/molds you like. Put in the fridge. To make the lemon coconut cream: put the coconut and cashews into your high speed blender and blend until it turns into a thick paste/butter. Stir in a 1/4 cup lemon juice and the maple syrup until evenly combined (or blend it in). If you'd like more lemon flavour, add more lemon juice! I like mine quite tart - no pun intended, seriously - so I used a full 1/2 cup. Spread this mixture evenly into your crusts, then let them sit in the fridge overnight or for at least a couple hours so the flavours can get to know each other. Garnish with mint, basil, lemon zest, maple syrup or whatever else you like! Life is good!
