I see most of your recipes have nuts..I am a vegetarian but really dont think I could be vegan..I have a long list of allergies and food restrictions due to sjogrens..nuts, flax, seafood, many kinds of fruits and seed oils and spices..I would have nothing to eat without dairy and eggs. Not fair though the heavy handed you must be vegan to truly care about animals and the environment. Sometimes you just have to do the best you can, vegan isn't realistic for everyone

what is a substitute for cashews for those with cashew allergies?

The only other nuts that give as smooth results are macadamia nuts. You could also try tofu, with a bit of tweaking (it's not as thick or sweet).
