Mac ‘n’ cheese is one of the most classic food pairings out there. A dish of English origin, it is essentially comprised of two ingredients: cooked macaroni and cheese sauce. Alone, the two are nothing remarkable but combined they make one of the staple dishes of many people’s childhood.
While the dish has never gone out of style, it appears these days that Mac ‘n’ Cheese eating competitions are in vogue for dairy and plant-based eaters alike as evidenced by the emergence of the very first South Carolina-based Vegan Mac Down.
For those wondering, the Vegan Mac Down is a vegan macaroni and cheese recipe competition that is slated to be held in South Carolina on September 10. Sponsored by the non-profit group Vegan Outreach, this will be the first “mac down” held in any of the Carolinas, although they have previously brought the event to Colorado, New Mexico, Ohio, and California (shout-out to One Green Planet blogger, Joni Marie Newman, for winning the California mac down!).
Tickets to the event cost $8 in advance at MacDownSC.eventbrite.com, or $10 at the door, and guests will be able to taste test plant-based mac and cheese prepared by a variety of vegan and non-vegan chefs alike. One hundred percent of the proceeds earned will go to Vegan Outreach’s work worldwide.

This gluten-free ‘Just Like Boxed’ Mac and Cheese by Jamie Bevia will transport you right back to childhood.
Thinking about your beloved boxed mac and cheese and really missing it? Have no fear, this recipe has got you covered! Normally homemade mac and cheese is pretty much all sorts of unhealthy melted cheeses thrown together with white pasta, butter, and cream. Believe it or not, this recipe for vegan ‘just like boxed’ mac and cheese is pretty damn near close to the real unhealthy deal, but healthy! Don’t be intimidated by coconut milk. It does not taste like coconuts.
Allow Rachel Hanawalt to show you how to make rich ‘cheese’ sauce out of squash, like in this recipe for Creamy Butternut Mac and Cheese.
For many of us, mac and cheese was a dinnertime staple. This recipe for mac and cheese swaps high-fat butter and cheese for more nutrient-dense butternut squash, cashews, and nutritional yeast. With all the ingredients combined into a creamy sauce, the recipe really does taste like mac n’ cheese.
Did you know you could make creamy sauces out of cauliflower? Try it out in this recipe for Cauliflower Mac and Cheese by Maya Sozer.
