This is one of the most popular Greek dishes and can be found pretty much at any tavern all over Greece. It's a very tasty dish and makes a great appetizer or side dish. I know many people that enjoy it as main meal as well. Super easy recipe to make too!

Greek Fava [Vegan]

This Recipe is :

Greek Fava

  • 1 cup of santorini fava (or yellow split peas)
  • 1 medium-large red onion, chopped
  • 2 TB olive oil
  • 1/2 tsp sea salt


  • Extra virgin olive oil
  • Freshly squeezed lemon juice
  • Thinly sliced spring onions
  • Capers


  1. Wash the fava really well
  2. Place the fava and enough water to cover the fava in a large cooking pot and bring to boil
  3. Cook 5-10 minutes until froth rises to the top. Drain the fava and rinse well
  4. Place back in the pot with 2 1/2 cups of water and bring to boil
  5. Lower the heat to medium
  6. Add the onion and the olive oil, salt to taste and cook for about 40 minutes
  7. Add more water if the fava starts drying out
  8. When the fava is cooked, remove from the stove and let it cool
  9. Blend the fava with an immersion blender until totally creamy
  10. Serve in small plates and top with extra virgin olive oil, freshly squeezed lemon juice, thinly sliced spring onions and capers
