Sweet Cilantro Pasta [Vegan, Gluten-Free]
- 1 pound gluten-free pasta
- 1/3 cup vegan coconut yogurt
- 1/2 tsp. fresh orange zest
- 3 Tbsp. fresh orange juice
- 1 Tbsp. olive oil
- 1 pound black grapes
- 1/4 cup finely chopped fresh cilantro, plus more for topping
- 1/4 tsp. sea salt
- 1/4 tsp. black pepper
- Cook pasta according to package directions. Drain and set aside to cool for 5 minutes.
- In a large bowl, combine all ingredients; gently toss to combine.
- Serve chilled.
