Coconut Ginger Smoothie

Consider this the perfect happy hour drink for those of us that don't drink cocktails. (Or perhaps, those of us who just don't need another one...) This smoothie is sweet with a bit of spiciness from the ginger. If you are not a fan of ginger, then you can easily decrease the amount or leave it out entirely. This smoothie is wonderful at a mocktail party, for post-workout hydration, or for any time you are in need of a fancy, but-not-so-fancy refreshment. Enjoy.

I'm so happy I found this recipe. I've been crazy about ginger recently for holiday-themed drinks. But this definitely sounds like it'll be great after a workout, and I can't wait to try it. Thank you!
