May kicked off the countdown to the summer season, and with it, came a lot of exciting news. Burger season is upon us, the Royal Wedding was amazing, and we found some amazing hotels for you to check out that are vegan-friendly! May was also the start of cooking outside, the grill is hot and ready for your sweet summer meals. We’ve got you! That’s why we’ve compiled a list of 15 of the most viral recipes on our Food Monster App!

1. Tandoori Tofu
Vegan Tandoori Tofu

Not only does the Tandoori-Style Tofu taste delicious – spicy and moist – but the leftover marinade helps make an amazing sauce that can be ladled over the tofu, if desired, and over rice or potatoes.

2. BBQ Lentil Meatballs
Vegan BBQ Lentil Meatballs

BBQ Lentil Balls. Simple plant-based ingredients of lentils, rice, mushrooms, and BBQ sauce. Vegan protein-packed dish! Great as a post workout meal or to bring to outdoor BBQ events.

3. Cashew Mozzarella That Melts

This recipe for vegan mozzarella is fantastic because it is so simple – you only need five ingredients. All you need is a little patience and you will have delicious gooey mozzarella that will taste like it’s fresh from the countryside of Italy.

4. Green Goddess Griller
Vegan Green Goddess Griller

You’ll feel like a green goddess (or god) when you treat yourself to one of these amazing sandwiches! Nutty pesto, creamy avocado, and melty vegan cheese come together between two pieces of bread to create the grilled sandwich of your dreams.

5. Zucchini Chickpea Fritters

These Zucchini Chickpea Fritters are probably the fastest, yummiest fritters you can make. They’re very, very simple and unbelievably fluffy and soft without baking powder.

6. Veggie Summer Rolls With Spicy Garlic Peanut Sauce
Vegan Veggie Summer Rolls With Spicy Garlic Peanut Sauce

You can make these totally raw by leaving out the vermicelli and using collard greens or seaweed instead of rice paper. Otherwise, let’s get riced! There is something so satisfying about rice paper rolls filled with fresh herbs, vermicelli, greens, and veggies, paired with a creamy flavorful dipping sauce. I could probably eat this and/or brown rice sushi every night of my life.

7. Iranian Eggplant and Chickpeas Stew
Vegan Iranian Eggplant and Chickpeas Stew

The texture of the eggplant and chickpeas in this Iranian Stew go so well together, and the sweetness of the dates and apricots blend perfectly with the cumin, cinnamon, nutmeg, and turmeric. Just thinking about it makes me smile. Eggplants protect the brain by fighting free radicals, and chickpeas help lower risk of colon problems.

8. The Miracle Bread
Vegan The Miracle Bread

Say hello to the prettiest bread in town! Vegan, gluten-free and insanely delicious!

9. Easy Sour Cream
Vegan Easy Sour Cream

Sour cream is one of those foods that makes a recipe go from delicious to perfection. But what if you are dairy free? This vegan sour cream fills the void. It’s creamy and tart and just as good as the traditional version.

10. Cauliflower Ceviche
Vegan Cauliflower Ceviche

Ceviche differs from country to country. This Cauliflower Ceviche is closest to the Mexican version which contains onions, tomatoes, and peppers. Onion, cilantro, and lime juice have also been added to create a spicy, tangy, and refreshing appetizer. Serve in an avocado for a fun presentation and with plenty of tostadas or chips!

Some of those recipes looks so good! I definitely need to try the bbq lentil meatballs and the cashew mozzarella melt! The chocolate cream caramel bars looks so good too :)
It can be quite a trigger to always create new recipes, especially on a vegan diet!
As a vegan myself, I take extra care about having a healthy and well-balanced diet. This is more complicated not to suffer from any nutrients deficiencies as a vegan. I\'ve written a complete guide on how to avoid the most common deficiencies so you\'re sure to have a healthy plant-based diet: https://naturaldietetics.com/healthy-vegetarian-and-vegan-diet/
Anyway, thanks again for this article! Lots of good and inspiring recipes :)
