These Strawberry Lemonade Meltaway Bites were our very first #5under5! They have a “melt in your mouth” quality made from a combination of coconut flour and substituted roasted, salted cashew butter. It’s a little pricey, but the cashew butter ingeniously stands in for the nuts, the salt, and the coconut oil because of its high fat content. Agave nectar is an affordable sweetener, but you can use whatever liquid sweetener you already have on hand. As a finishing touch, we decided to coat the bites in crushed freeze dried strawberries for a pop of hot pink color and burst of fruity summer flavor! You can’t have strawberry lemonade without the strawberry, right?
