Soups, sides, and appetizers, oh my! If this list is any indication, Green Monsters sure know how to have a good time with food. Cauliflower’s magical ability to take on any flavor makes it perfect for recreating all of the appetizers that we hold nearest and dearest while also proving that boring sides are a thing of the past. Avocado is as popular as it’s ever been, but these recipes really know how to take it to the next level. What other kinds of soups, sides, and appetizers did Green Monsters crave in 2015? Let’s take a look!

  1. Mediterranean Grilled Chickpea-Stuffed Avocados

Just when you thought that avocados couldn’t get any better, this recipe came along. Grilled avocado halves are stuffed with a colorful mix of tomato, cucumber, crispy grilled chickpeas, and then drizzled with a creamy tahini sauce. The resulting deliciousness is almost too much to handle.
