As we approach the summit of summer, the weather has been hot and we’ve been on the hunt for seasonally appropriate dishes that delight our taste buds and satiate our appetites—and there’s nothing more satisfying than a brand spanking new American Fusion meal. We are paying homage to the sunshine and went through our Food Monster App to curate a special roundup featuring ten of our amazing American Fusion recipes that are perfect for the summer. 1. Ahi Sushi Cups

These vegan, gluten-free Ahi Sushi Cups are guaranteed to impress whomever you set them in front of, and are filled with fresh summertime ingredients like tomatoes and avocados. The sushi rice is tangy, sticky, and filled with avocados and a faux ahi that is better than the real thing. This recipe is a must-make for anyone who loves sushi.

2. Roasted Ratatouille Spaghetti

We’re loving this gluten-free twist on French Ratatouille, which traditionally consists of garlic, onions, tomatoes, zucchini, and herbs. The sauce in this Roasted Ratatouille Spaghetti recipe is infused with Japanese flavors thanks to the addition of miso paste. The addition of miso gives this dish an unusual savory depth of flavor despite its simplicity, and all of the fresh produce makes this a light recipe perfect for summer.

The traditional pizza crust is topped with spicy, Mexican-inspired sauce, then tacos stuffed with fajita-style Portobello mushrooms and red peppers. A huge dollop of guacamole, plenty of dairy-free potato cheese sauce, pico de gallo, and your favorite taco toppings all send this pizza into the stratosphere.

5. Beet Tacos With Mung Beans With Blackened Tofu, Radish Slaw, and Crispy Corn

Double check. Yes, this crispy tofu with crisp slaw, mung beans, and corn wrapped up in a vibrant homemade beet tortilla is all that and more. Dig in!

6. Lemon Pretzel and Gochugaru White Chocolate Bark

These Lemon Pretzel and Gochugaru White Chocolate Bark treats take less than 10 minutes to make and they are everything sweet, salty, and spicy. Crunchy pretzels are combined with white chocolate, then sprinkled with lemon zest and gochugaru, a Korean chili powder. One bite and you’ll be wanting more!

7. Creamy Kimchi Zucchini Pasta

This gluten-free, raw, vegan, and Creamy Kimchi Zucchini Pasta is a kimchi lover’s dream! The luxurious sauce is made from a blend of raw cashews and kimchi and seasoned lightly with sesame oil and tamari — and of course, it’s topped with even more kimchi! 10. Bangin’ Buffalo Cauliflower Pizza

Trust me, you and your dinner guests will be positively drooling over this Bangin’ Buffalo Cauliflower Pizza. There are a few steps to this recipe, but they are all fairly easy and you can make the blue cheese dressing and pizza dough ahead of time. Making everything from start to finish takes about 2 hours, but when I have had the pizza dough and blue cheese on hand it cut down my time to 1 hour & 20 minutes ( 20 minutes prep & 1 hour baking).

11. Simple Korean Kimchi BBQ Burgers

These Simple Korean Kimchi BBQ Burgers combine the signature sweetness of Korean BBQ sauce with a “beefy” veggie burger, and let’s face it: BBQ is the ultimate summer fare. Add on some spicy kimchi and you’ve created a dinner that’s sumptuous and memorable. The burgers are spicy, the sauce is smoky and sweet, and the spicy kimchi adds a little bit of crunch. You definitely need to pair these with a toasty burger bun and a side of spiced sweet potato fries.

12. Ginger Tempeh Poke Bowl

Traditionally, poke (pronounced “poh-kay”), a dish from Hawaiian cuisine, are made with raw fish and severed on some rice with an assortment of toppings such as edamame, fresh vegetables, and mangos. This recipe for Ginger Tempeh Poke Bowl is a great fish-free take on the traditional dish and super seasonal with its fresh and colorful summer ingredients like avocado. It’s loaded with marinated tempeh, grilled pineapple, and served on a bed of sprouted brown rice. Not only is this dish healthy, it’ll keep you feeling light!

13. Indian Fusion Green Tacos

These Indian Fusion Green Tacos merge elements of Mexican and Indian cooking, which already have some major similarities when it comes to key ingredients and spices, making this an obvious match made in culinary heaven. Vibrant flavors like cumin, lime, chili, mango, garlic, tomato, and beans feature prominently in both. These ingredients and more come together to create these awesome fusion wraps, and perhaps you’ll agree that Mexican and Indian flavors are a match made in heaven!

14. Jackfruit Banh Mi Tacos 

Whoever first thought of turning a Vietnamese banh mi sandwich into a taco was a certified genius. But even the work of a genius can be improved upon, and the result here is these entirely plant-based and gluten-free Jackfruit Banh Mi Tacos. Yes, please! Tender jackfruit is coated in a sweet and sour teriyaki sauce, all topped with crunchy, tangy pickled veggies, creamy Sriracha mayo, and enrobed in a soft corn tortilla. Now that’s one epic Vietnamese taco.

15. Miso Kimchi Nachos With Cashew Cheese 

These Miso Kimchi Nachos are a great combination of Korean and Southwestern classics. The miso paste in the cheese sauce adds the perfect deep, salty undertone. The sour crunch of the kimchi alongside the freshness of the kale and yellow pepper is just totally awesome. You definitely want these nachos in your belly right now!
