The Greatest Vegan Recipes to Celebrate National Cashew Day

Happy National Cashew Day! Did you know? These crescent-shaped nuts are a cousin of poison ivy! Their shells contain an allergenic toxin called anacardic acid that could potentially cause an itchy skin reaction. You can get rid of the toxin by roasting the nuts. Roast them outside to prevent another life-threatening allergen attack because the fumes they emit are not good for you. So much work for this little nut, but it’s so worth it.

Cashews make great “cheesy” sauces for vegan and raw vegan dishes. They create a creamy texture and sauce great for Macaroni and Cheese and vegan cheesecakes. These nuts also are popular in Asian cuisine, especially Thai, Indian, Chinese, and Vietnamese. You can find cashews in popular Thai dishes like Pad Thai. Try this “dangerously” cheesy nut with your dishes.
