Chloe Coscarelli, chef and winner of Food Network’s “Cupcake Wars,” has just published her first cookbook, “Chloe’s Kitchen,” which features a plethora of her delicious vegan recipes. She stopped by the Today Show to promote the book and make avocado pesto pasta and cinnamon-espresso chocolate chip cookies with Kathie Lee and Hoda Kotb.
The cookbook focuses on reinterpreting 125 of America’s favorite foods with great-tasting ingredients and clever techniques. It also includes information on how one can get all their nutrition from a plant-based diet and why it’s so healthy, and features a foreword by renowned physician Neal D. Barnard, M.D of the Physicians Committee for Responsible Medicine.
