Spring is here and to us, that means that it’s carrot cake season. Carrot cake is pretty much the perfect Easter/springtime dessert in our books. Easter is peppered with rabbit motifs and rabbits like carrots – it sounds logical to us, okay? …And, okay every season is carrot cake season to us, but with spring comes even more reasons to stuff our faces with carrot cake. Especially if they’re anything like the Raw Carrot Cake With Cashew Lemon Frosting in the photo below. If you already felt like you were going for the healthier option by choosing carrot cake over other types of cakes (because carrots = healthy), then get ready to feel even healthier by making this cake. Don’t worry, there are no eggs in this cake – it’s completely vegan. Instead of flour, milk, and eggs, the cake is made from oats, dates, carrots, cinnamon, and nutmeg. And instead of a frosting made from creamed butter and powdered sugar, this carrot cake is covered with a creamy, decadent frosting made from cashews and lemon juice. Not only does it look amazing, it’s amazingly easy to make. Literally, all you need to do is blend the ingredients in your food processor, then transfer it to a springform pan and set in in the fridge. Seriously.

This raw vegan carrot cake requires minimal effort on your part and you end up looking like the champ of a televised baking competition. And it’s carrot cake – so that’s a win-win.
